Summer salads are a favorite in the Midwest. Try this recipe that uses Maple Syrup in the warm dressing for this spinach salad......
- 1/2 pound bacon
- 1 small onion, chopped
- 1 cup Maple Syrup
- 1 cup rice vinegar
- Pinch of salt
- Hard boiled eggs
- Fresh strawberries
- 1 pound Spinach
..... Wash and dry spinach. Set aside. Fry bacon, saving the drippings. Remove bacon, crumble and set aside. Fry onion in grease until soft. Add syrup, rice vinegar, bacon and salt to grease. Simmer until combined. Arrange spinach in a bowl or platter with strawberries and egg slices. Drizzle with warm dressing. Toss if desired.
